  1. Make a simple mint sauce by mixing finely chopped mint with olive oil, red pepper flakes, and salt.
  2. Add chopped garlic to half of the sauce and brush the ribs with it. Leave to marinate for a couple of hours.
  3. Use the second part of the sauce to grease the finished meat just before serving.
  4. Roast the rack of lamb until medium well-done to keep the meat juicy.
