- 12 rack of lamb
- bunch of mint
- 2 cloves of garlic
- 1/4 tsp chili peppers
- 1/3 cup olive oil
- salt, pepper
- Make a simple mint sauce by mixing finely chopped mint with olive oil, red pepper flakes, and salt.
- Add chopped garlic to half of the sauce and brush the ribs with it. Leave to marinate for a couple of hours.
- Use the second part of the sauce to grease the finished meat just before serving.
- Roast the rack of lamb until medium well-done to keep the meat juicy.
