  • 12 rack of lamb
  • bunch of mint
  • 2 cloves of garlic
  • 1/4 tsp chili peppers
  • 1/3 cup olive oil
  • salt, pepper


  • Make a simple mint sauce by mixing finely chopped mint with olive oil, red pepper flakes, and salt.
  • Add chopped garlic to half of the sauce and brush the ribs with it. Leave to marinate for a couple of hours.
  • Use the second part of the sauce to grease the finished meat just before serving.
  • Roast the rack of lamb until medium well-done to keep the meat juicy.
