  • 50 g breadcrumbs
  • 50 g parmesan, rated
  • 60 g butter, soft
  • 1 egg (s)
  • 1 tablespoon mustard, hotter
  • rosemary

Instructions

  1. Wash meat, pat dry. Carefully remove the rind and scrape off the ribs. Pepper the meat. Chop the shallots very finely. Wash the herbs, pat dry and finely chop. Mix the white bread crumbs, parmesan, shallots, herbs, butter and egg.
  2. Fry the meat in hot oil. Salt and roast in the preheated oven at 200 ° C for about 10 minutes. Take out meat. Brush with mustard. Spread the herb mixture on top. Then bake for 10 minutes at 220 ° C.
