Melt some butter in a frying pan, add the potatoes, season with salt and fry for a few minutes without turning. When the potatoes are seared, turn them and do the same again. Then lightly press the potatoes into a cake in the pan, put some butter on top and close the pan with the lid. Reduce the heat a little. Fry the rösti for about 15 minutes, then turn them carefully, add a little more butter and close with the lid. After another quarter of an hour, the rösti is done.
It is served with a nice pork sausage with onion sauce. Or you can put some raclette cheese on top of the rösti shortly before the end of the roasting time and let it melt.
