We clean the red fish from scales and cut them into steaks up to 2 cm thick.
We spread the fish on a baking sheet covered with parchment. Salt the fish well on both sides. Sprinkle with a pinch of sugar, black pepper to taste, and a pinch of ground ginger. Use our hands to drive the spices well into the steaks.
Sprinkle with oil. Leave it for 5-10 minutes to marinate the fish, and in the meantime, preheat the oven to 200 degrees.
We bake the red fish in the oven for 30 minutes.
