Instructions

  1. Finely chop the onion and garlic and sauté in the oil. Add the lentils and ginger and sauté briefly.
  2. Add the vegetable stock and coconut milk and bring to the boil briefly. Season to taste with salt, pepper, turmeric, curry and cayenne pepper. Let it steep for about 20 minutes on low heat so that the lentils are still a bit firm to the bite.
  3. Cut the mango into small pieces. Finally stir in the mango, lemon juice and sour cream and heat briefly.
  4. The recipe is enough as a main course for 1 person, as a pre-soup for 2.
