Instructions

  1. Peel, halve or quarter the pears, core and steam in 4 tablespoons of water, lemon juice, sugar and spices for 6 to 8 minutes, then remove from the liquid.
  2. Let this simmer for another 5 minutes with red wine, port and sugar. Mix in the starch, bind the liquid, mix in the brandy and pour this brew over the pears. In a narrow container (so that everything is well covered) let it steep for 48 hours if possible.
  3. Serve chilled with cream, raisins or grated chocolate.
