Beat the eggs until foamy, add the buttermilk, then the flour and finally the mineral water, more or less as you like. Mix everything into a smooth dough and cover in the refrigerator for 30 minutes. This makes the dough smoother and the flour can develop its stickiness.
Fry the pancakes in a well-heated pan (I use level 7 out of 9). If the pan is well coated, it will work without oil.
Cover or spread as desired.
The total dough has about 1740 kcal. I get 12 pancakes out, so that`s 145 kcal or the equivalent of about 3 P.
