- Preheat the oven to 200 degrees.
- Clean the Brussels sprouts and cook in salted water until they are firm to the bite.

- For the topping, mix eggs with crème fraîche, cream or milk and cranberry compote and season.
- Spread the Brussels sprouts in the molds, chop the walnuts and fold in. Spread the topping on the Brussels sprouts.
- Grate the cheese and spread it on the gratin.
- Then bake in the oven for about 20 minutes.
