In a very large bowl, mix the chicken, bacon, mushrooms, onions, garlic, hot peppers, leeks (washed, halved and cut into 1 cm strips), oil, wine, soy sauce, paprika powder, cayenne pepper and a teaspoon of salt. Let the whole thing stand for about 15 minutes.
In a large pan, bring the water with the bouillon cube and a little salt to a boil and let the rice boil in it. Before the rice is done, reduce the heat and let the rice steep. (There should still be some water in the pan)
Heat a frying pan and fry the vegetables in three portions and add to the rice. Season to taste with salt and pepper, sprinkle with cheese if you like.
