Peel and finely dice onions and garlic. Also cut the sausage into small pieces. Peel the potatoes and cut into bite-sized pieces.
Heat 4 tablespoons of oil in a saucepan or roaster. Fry the onions, garlic and chorizo while stirring. Add the potatoes and the last two spoons of oil. Fry everything and deglaze with 1/2 liter of water. Now stir in the broth, bring to the boil and then simmer openly for about 25 minutes.
Wash the parsley, cut into small pieces and add to the potato pot. Finally, season everything with salt and pepper.
