Mix salt, pepper, paprika and caraway seeds and rub the finished rolled roast well on all sides. Heat the oil in a roasting pan and fry the roast quickly and evenly.
Place the chopped garlic, diced onion and carrot slices around the roast and place in the preheated oven at 200 degrees. Fry for 2 hours, turning more often and pouring gravy over them.
Then warm the meat and bring the sauce to the boil, pass through a sieve and cook the crust of the bread in the sauce until soft. Remove the bread crust before serving.
