Instructions

  1. Wash the roast wild boar and dry it with paper towels.
  2. Heat the frying fat in a pan and sear the roast on all sides. Maximum 2 minutes per side.
  3. Take the roast out of the pan and rub it with marjoram or rosemary, then wrap it with the bacon, fix it with toothpicks and place it on a roasting tray. Now pour the olive oil, salt and pepper over the wrapped roast and place everything in the oven preheated to 100 degrees for 90 minutes.
  4. After 90 minutes, measure the core temperature of the roast, it should be 55 - 60 degrees (pink), 60 - 65 degrees (done).
  5. Cut the roast into 8 slices and serve with French fries, potatoes, dumplings or croquettes.
