- Clean the rocket. Cut the onions into rings. Halve the cherry tomatoes. Dice the mozzarella.
- Arrange the rocket on deep plates and top with the onion rings, cherry tomatoes and mozzarella.
- Pour some garlic oil into the hot pan and fry the chicken breasts, seasoned with pepper, salt and paprika powder, until golden brown.
- For the dressing, mix a little olive oil, balsamic vinegar, pepper, salt and basil together well.
- Arrange the chicken breast on the salad and pour the dressing over it.
- Baguette goes well with it.
