Ingredients

• 300 g rocket, ready to cook
• 10 cherry tomato (s), halved
• 100 g olives, black, without stone
• 5 spring onions, cut into thin rings
• 150 g sheep cheese, diced
• 1 handful basil
• 4 tablespoon balsamic vinegar
• 1 teaspoon apricot jam
• 2 tablespoon orange juice
• 3 tablespoon olive oil
• salt and pepper

Instructions

1. Spread the rocket, tomatoes, olives, spring onions and sheep cheese on plates.
2. Mix the vinegar, jam, oil and juice into a dressing, season with salt and pepper and spread over the salad. Finally sprinkle with the basil leaves.
3. Fresh white bread goes well with it.
4. If you like, you can also sprinkle a few walnuts or pine nuts over the salad.
