Ingredients
- 300 g rocket, ready to cook
- 10 cherry tomato (s), halved
- 100 g olives, black, without stone
- 5 spring onions, cut into thin rings
- 150 g sheep cheese, diced
- 1 handful basil
- 4 tablespoon balsamic vinegar
- 1 teaspoon apricot jam
- 2 tablespoon orange juice
- 3 tablespoon olive oil
- salt and pepper

- Spread the rocket, tomatoes, olives, spring onions and sheep cheese on plates.
- Mix the vinegar, jam, oil and juice into a dressing, season with salt and pepper and spread over the salad. Finally sprinkle with the basil leaves.
- Fresh white bread goes well with it.
- If you like, you can also sprinkle a few walnuts or pine nuts over the salad.
