Finely chop the roll pugs and the gherkins rolled in them. Roughly grate the apple with the peel and mix with lemon juice, rollmops and sour cream. Pepper. Chop the dill, set aside a few stalks for garnish. Mix the dill into the rollmops mixture. Arrange on plates and garnish with a sprig of dill.
This goes well with farmhouse bread or potato pancakes.
If you want to serve it as a starter, it is enough for 4 to 5 people.
