Let rise for 60 minutes, then knead the dough again briefly and form dough pieces. Let rise again for 30 - 45 minutes, covered with cling film so that the surface of the dough pieces does not dry out.
After approx. 25 minutes, cut into the dough pieces or shape them with a roll former.
Put in the oven preheated to 250 degrees and moisten the oven with a water syringe.
Let it bake for 10 minutes. During this time, spray water 2 - 3 times into the oven. Then reduce to 200 degrees and bake for another 15 minutes.
