Mix the flour, sugar, salt, milk and eggs into a thin dough. Let rest for 10 minutes.
Heat the frying fat. Hold the waffle iron in the hot fat for 1 minute. Dip the iron into the dough up to the top edge, it must not run over it, otherwise the dough will bake together over the iron and you can no longer get the waffle off the iron.
Bake in hot fat until the waffle separates from the iron. Let cool on kitchen paper and dust with icing sugar.
