Heat a greased cast iron pan on the stove top. Sear the steaks for 1 minute on each side, then season with salt and pepper after turning. Switch down the temperature. Add the butter, garlic and parsley to the pan. Let the steaks simmer (medium about 4-5 minutes).
Serve the steaks with the garlic butter sauce with mashed potatoes or French fries and a hearty salad with vinegar. A light beer or a red wine goes well with this, and a nice swivel of cognac after the meal.
Tip: After shopping, let the steaks ripen in the refrigerator for 4-5 days, rinse and pat dry.
