Cut the meat into cubes. Add the mayonnaise and wine and stir everything well. Season with salt and pepper and add the bay leaves. Let the mixture stand for a day at normal room temperature.
The next day, cut the onions into strips and squeeze the lemon. Put everything in the meat mixture. Then mix all the ingredients together well.
After two to three hours of steeping time, the meat can be put on skewers and placed on the grill.
