Wash the rocket and spin dry. Wash the grapes, pat dry and cut in half. Wash the figs, pat dry and quarter. Cut the ham into fine strips.
Mix the mustard, balsamic vinegar, walnut oil and grapeseed oil into a dressing. The dressing and season with salt and pepper.
Arrange the salad on plates with the grapes, figs and walnuts and drizzle with the dressing. Season everything with salt and pepper and spread the ham on top. Finally, grate the parmesan over the top.
