Mix honey, lemon juice, vinegar and oil into a marinade. Place the salmon fillets on a plate, pour the marinade over them and leave to marinate in the refrigerator for 2 hours.
In the meantime, cut the chives into rolls. Mix the crème fraîche with honey, lemon juice, salt and chives.
Heat up the grill. Grill the salmon fillets in the oven for about 10 minutes on each side. Then salt the fish.
Serve the grilled salmon slices with the honey sauce.

Tip: Instead of the butterfly salmon fillets, 1 - 2 cm thick salmon slices can be used. The grilling time then increases by 1 - 2 minutes.
