Soak 16 wooden skewers in cold water for 10 minutes. Turn on the grill to preheat to medium-high heat. Turn on the oven to preheat to 180 degrees.
Pour peanuts on a baking sheet in one layer and put in a preheated oven, fry, stirring occasionally, for 4-6 minutes. Remove the roasted peanuts from the oven, let cool and then chop.
Cut the salmon fillet into 4 cm pieces and string on double wooden sticks. Sprinkle fish with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Place the salmon kebabs on the grill and cook until golden brown on all sides, about 4-6 minutes.
In a small bowl, combine olive oil, cilantro, lemon zest and chopped peanuts. Serve salmon kebabs with sauce.
