- Mix the oil, lime juice, vinegar and spices into a marinade.
- Clean the samphire, add to the marinade and let it steep a little.
- Dry the scallops on paper towels. Fry vigorously on both sides in the oil.
- Place the scallops on a loop spoon or small plate, put some salad on top and grind some dried chilli over them.
