Clean the scampi / prawns, remove the shell and remove the intestines. Peel and chop the onions and garlic. Fresh tomatoes are peeled, pitted and cut into small cubes. But I like to use ready-made tomatoes, either canned or tetrapack. These can then be pieces or whole.
The oil is heated in a large pan, then onions and garlic are briefly sweated in it. Next, add Sambal Oelek. I am always careful there, rather spice it up than let the flames come out of your throat. So take only a little at first and season it later.
Add the cleaned and dabbed dry scampi / prawns, as well as the tomatoes. Fry everything briefly and season with pepper, salt and a little sugar. Add the chopped parsley at the very end.
Goes well with fresh baguette or rice. A nice cold beer with it and a delicious, quick dish is ready.
