Prepare 4 small, ovenproof molds, e.g. for crème brulée, and fill each with 2 tomato slices and one slice of goat cheese. Put the herbs of Provence, salt / pepper and honey on top. Finally, cut a lid out of puff pastry on the molds and place it on top, pressing gently. Brush with a little milk or egg yolk for a nice color.
In the oven at 200 ° C for 10-15 min.
Arrange the molds on small plates and point out the hot molds when serving (!). If you pierce the crispy puff pastry cover with a fork, a stunning scent rises into your nose. Bon Appetit!
