Put the chips in a freezer bag and pound them into small pieces. Knock the schnitzel flat and roll in the egg. Roll the escalopes rolled in egg into the chips, as you would otherwise do with breadcrumbs.
Then in the hot pan with oil. Fry well. Personally, I put the schnitzel drizzled with frying fat in the oven for a few minutes. Serve with potatoes and vegetables to taste.
