For the crust, stir the butter until frothy. Gradually mix in the breadcrumbs, mountain cheese, apple pieces, Worchestershire sauce, parsley and chives. Season to taste with salt and pepper.
Salt and pepper the schnitzel and fry lightly on both sides in the clarified butter. Cover each schnitzel well with the crust and bake for about 5 minutes in a preheated oven at 180 degrees top heat.
Mashed potatoes, peas / carrots tossed in butter or princess beans go well with it.
