Open the eggs in a large bowl and cook as above. Spice up.
Then add the milk and - so that the eggs are fluffy - do not whisk with a whisk, but stir well with a hand mixer or a hand blender until bubbles have formed on the surface.
Now put the oil in a preheated pan and slowly add the egg over medium heat. Let it rest in peace, stirring occasionally with a wooden spoon.
When the egg has reached the desired consistency, place everything on a plate and briefly fry the ham, salami or diced ham as well as the mushrooms and chives in the same pan.
You can also change the recipe by adding a little grated Pecorino or Parmesan before whisking - it`s a completely different, hearty note!
Serve everything together with a toast - really tasty for in between.
