Wash and dry the leek and cut into fine rings. Wash and dry the pepper as well and remove the white inner walls. Then cut into small cubes.
Peel the garlic clove.
Whisk the eggs together with the spices and herbs. Put the garlic into the eggs through the press and mix everything together again.
Let the oil get hot in a pan. Let the leek and peppers sauté for a few minutes. Then add the egg mixture and let it set while stirring constantly. It`s done.
