Cut the ham into small strips and the spring onion into rings. Heat some butter in a pan and add the previously cut. In the meantime, break the eggs and season with salt and pepper. Add a shot of milk or optionally mineral water with sparkling water and stir.
After 1 - 2 minutes, add the egg to the pan and whisk. When the scrambled eggs are almost ready, add the grated cheese and leave in the pan until the egg is well cooked and the cheese pulls strings.
I like to eat the scrambled eggs with buttered buns.
