Melt the butter and let it cool. First beat the eggs + sugar until frothy - then whisk all liquid ingredients together well.
Chop nuts + lemon peel in a blender or grind whole (a few pieces don`t do anything). Then mix all the dry ingredients well. If you like, add a pinch of salt. Just mix briefly into the liquid mixture until everything has combined.
Grease the muffin tray and dust with flour / breadcrumbs / ground nuts - or put paper cases in it. Spread the muffin batter into the wells. Bake at about 180 ° C for about 20-25 minutes.
If desired, dust with powdered sugar or cover with cinnamon, nut, rum, chocolate or other glaze.
Variations:
If you don`t like lemon peel + raisins, you can use grated chocolate instead of this - but then just fold in, do not mix.
If you like cinnamon, you can use a little more of it - depending on your taste.
