Preheat the oven to 175 degrees circulating air. Remove the thyme leaves from the stem and chop finely.
Put the quark, milk, egg, salt and oil in a bowl and stir. Sift the flour, mix with baking powder, sesame seeds and thyme, add to the quark mixture and knead into a smooth dough. Shape the dough into a roll of approx. 70 cm and twist it into a snail. Line a baking sheet with parchment paper.
Place the dough snail on the baking sheet and bake for about 40 - 45 minutes, brush with milk 10 minutes before the end of the baking time and sprinkle with the rest of the sesame and thyme. Carry out a chopstick test with a wooden stick and check whether the bread is through.
