Wash vegetables, cut into slices or strips. Cut the tomatoes into cubes, season with salt.
Fry the vegetables in this order in hot (!) Olive oil: onions, peppers, courgettes, aubergines, always adding the next vegetables after 1 - 2 minutes. At the very end add the tomatoes, then reduce the heat. Cook for approx. 5 - 10 minutes, depending on how firm you want the vegetables to be.
At the end add honey and aceto (can also be more or less according to taste), salt and pepper.
