Mix egg yolks with sugar until frothy. Stir in the vanilla sugar and salt. Mix flour with baking powder and gradually stir together with the milk to form a thick dough. Carefully fold the egg whites under the batter.
Cut out the apples in the middle with the apple corer, peel and cut into finger-thick slices. Dip the apple slices in the batter and fry them in hot oil, not browning on both sides. Sprinkle with cinnamon and sugar.
Serve warm. As a main course or dessert.
Tip: before you pull the snow under the dough, let it rest for about 20 minutes.
