Gouge, clean and scale the fish, make several cross cuts on the thicker sides of the meat and place on a baking sheet. Clean the vegetables, cut them very finely and place them under, in and on top of the fish. Cut the lime into slices and place on the fish, carefully place the pressed garlic cloves and coarsely chopped herbs in and around the fish. Sprinkle with the spices and then just baste everything with olive oil.
Bake in the preheated oven for about half an hour per kilo of fish at 200 degrees circulating air.
