Wash the beefsteak tomato, remove the stalk and cut into slices. Peel and slice the onion.
Heat some frying fat in a non-stick pan. Put in the tomato slices and season with salt, pepper and herbs of Provence. Place the onion slices on top of the tomatoes and cook covered over a low heat until the onion slices are translucent and soft. Carefully remove the tomato slices with the onions from the pan and serve.
