Rub the peel of an orange, set aside and then squeeze the orange.
For the dressing mix all the ingredients well, add the orange zest, chilli and ginger.
Peel and dice the other orange and place in a bowl. Cut the avocado into cubes of about the same size and add to the oranges. Also add the onions and chives.
Drain and chop the tuna and add to the other ingredients. Add the dressing and mix well.
Just before serving, fold in the lamb`s lettuce and sprinkle the kernels on top.
