Beat the egg white, salt, vanilla sugar and gradually 50 g sugar until the sugar has dissolved. Beat the egg yolks with the remaining sugar until frothy.
During this time, bring the milk with the cut vanilla pod to a simmer in a saucepan, switch off the stove or pull the saucepan off the plate. Stir the egg yolk foam into the milk until a foamy sauce is formed.
Form knobs / snowballs with a spoon from the egg white mixture, place in the saucepan with the vanilla sauce and cover and let stand until cooked.
The sauce with the snowballs can be enjoyed cold or warm. This goes well with fruits, fruit pulp.
