Cut the cheese (preferably well chilled) into small cubes and mix with the chives and oil, season with salt and pepper and then refrigerate the mixture for 1 hour.
Cut the figs into slices, cutting away the stem and any hard spots.
Spread the cheese on amuse spoons, place the fig pieces on top and drizzle with a little honey to taste.
You can of course use other soft cheeses, they just shouldn`t be too creamy, otherwise you can`t cut them well and they will also spread easily.
