Cut the vegetables into cubes or slices, fry them in oil, add a little water and sauté gently. Season to taste with herbs, salt and pepper. If you like it a little sweet, you can add some agave syrup when frying it.
Vegetarian goes well with it:
Breaded feta cheese and couscous, bulgur or quinoa.
Vegan goes well with:
Seared smoked tofu, deglazed with soy sauce and sprinkled with toasted sesame seeds.
