Backsteinkäse is an Allgäu red smear special cheese. Similar to Limburg cheese.
Scrape off the red smear from the cheese brick. DO NOT CUT!
Slice the cheese and place in a shallow bowl. Mix water, vinegar, oil, salt, sugar and pepper and pour over the cheese. Let it steep for a few minutes.
Cut the onion into rings and mix raw with the dressed cheese. Serve with farmhouse bread and fresh butter.
