Sour Cream and Kefir Jelly Instructions

  1. Put the gelatin in a small bowl or cup, pour in about 1-2 tablespoon. tablespoons of cold water and set aside for 10 minutes, to swell.
  2. Combine sour cream and sugar in a deep bowl. Beat with a mixer for 4-5 minutes, until the sugar is completely dissolved and bubbles appear.
  3. Then, continuing to beat, pour in kefir in small portions.
  4. When the gelatin swells, melt it in a saucepan over low heat or in the microwave on low heat. In no case should you boil, otherwise gelatin will lose its properties – just melt, constantly stirring, so that the crystals dissolve and the mass becomes homogeneous! Add melted gelatin to a bowl of kefir and sour cream.
  5. Beat with a mixer on high speed for about 2-3 minutes.
  6. Pour the finished mixture into glasses or bowls and send to the refrigerator for 2-3 hours or overnight, until it solidifies completely.
