Instructions

  1. Mix the pumpkin flesh with the flour, baking powder and a pinch of salt. Beat the egg until frothy and stir in, stir everything together thoroughly.
  2. Heat the butter in a pan and add the dough, tablespoon at a time, and bake the pancakes until golden brown on both sides.
  3. Sprinkle with sugar and cinnamon mixture and serve garnished with lemon wedges.
