Cook the spaghetti al dente in plenty of salted water. The cooking water is collected when draining.
Pour boiling water over the spaghetti in a well-warmed bowl and carefully stir in a little parmesan or pecorino cheese. Then add some water and some cheese again. Proceed in this way until the spaghetti is generously coated in a creamy cheese sauce.
At the end, plenty of freshly from the mill pepper is added.
