Cook the pasta in salted water according to the instructions on the packet.
Clean, wash and cut the fennel into strips. Chop the fennel greens.
Heat the oil, sauté the fennel in it. Pour in the vegetable stock and cook for approx. 10 minutes.
Season with salt and pepper. Stir in the sour cream.
Dice the salmon. Add to the fennel and cook for about 5 minutes. Season with salt, pepper and lemon juice. Serve with the pasta. Sprinkle with the fennel greens.
