Cut the spare ribs into portions and lay them flat. Peel and finely chop the garlic. Mix the olive oil, mustard, honey, lemon juice, sugar, garlic and a few tips of Tabasco to a marinade. Pour the marinade over the spare ribs and marinate covered for 3 hours.
Grill the spare ribs for 20 to 30 minutes at not too high a heat. Turn and brush with the rest of the marinade. Season with salt and pepper.
