Preheat the oven to 180 degrees circulating air. Whisk the quark, egg, olive oil and salt together with a whisk. Now add the flaxseed meal and, if you like, the chia seeds and let them soften a little. Weigh out the flour (also works with one type of spelled flour) mix with the baking powder. Knead the flour mixture with the quark mass, I add my hand, then I feel better whether the dough is too dry and maybe I need some quark as well. It has to be a smooth dough that does not stick much, if it sticks too much, just put some flour on the worktop and knead.
Cut the dough into 8 equal pieces and shape into rolls, I always shape a large ball and then divide it. Place these on a baking sheet and cut deeply crosswise with a sharp knife. Put the rolls in the oven for 20 minutes.
I also tried baking with freshly ground spelled flour, unfortunately they have become dry and firm and not loose. I suspect that it was due to insufficient fluid, but did not do any further research.
