Melt a little butter in a saucepan. Sweat the washed rice in it with cinnamon, cardamom and cloves for 2-3 minutes. Then add twice the amount of water (1 cup of rice = 2 cups of water, etc.) and season with salt, chilli and turmeric, stir well and try again if it is salty enough.
Bring it to the boil once and then let the rice simmer over a very low heat - do not stir in between, otherwise it will be mushy!
Pierce with a fork and see whether the rice has completely absorbed the water. Tastes great with chicken and fish.
